Lemon sorbet

  • 250 ml lemon juice 
  • 200 g sugar 
  • 300 ml water 
  • 3 egg whites 


  • Let the water and sugar come to a boil. 
  • Turn off the heat when the sugar has completely dissolved. Add the lemon juice to the sugar solution and leave to cool for an hour in the fridge. 
  • Beat the egg white until stiff and mix it bit by bit with the cold lemon syrup until you obtain a foamy mixture. 
  • Pour the mixture into the ice cream maker and leave to run for 30 to 40 minutes until the ice cream becomes firm. 


Place the ice cream in the freezer for half an hour before serving.
