Blend the oil, coriander, flour, parsley, baking powder, cumin, salt, cayenne pepper, egg whites, garlic and chickpeas in a blender until smooth.
Heat the waffle iron and lightly brush the top and bottom with oil using the grease brush. Also prepare a baking rack so your waffles can cool.
Spread the dough on the baking tray and close the appliance.
Bake the waffles until golden brown and firm in the center.
Halve a pita bun, fill with a falafel waffle and add vegetables of your choice.
