Mix the flour, gruyere cheese, ham, Parmesan cheese, baking powder, sugar, pepper and salt (to taste) in a large bowl.
In another bowl, whisk together the milk, melted butter, oil, 1 egg and spring onions.
Slowly pour the milk mixture into the flour mixture, while stirring.
Brush the baking tray with oil and spread the dough on the tray. Close it.
Bake the waffles until golden brown and crispy.
Brush the baking tray again, break the eggs into them and bake for about 4-5 minutes.
Serve a waffle with the egg on top!
