Ingredients

·        250 g self-rising baking flour

·        100 g broken mung beans

·        4 g dried yeast

·        2 cloves of garlic

·        ½ small Surinamese pepper

·        1 handful of spinach

·        ½ tsp ground cumin

·        1 tsp salt

·        1-2 tbs water (in which the beans have soaked)

·        Frying oil

Preparation

·        Soak the beans 1 day in advance

·        Remove the seeds from the Suriname pepper

·        Grind the beans with the garlic and Suriname pepper in our Hi-Efficiency Blender BL 4270. If the grinding is a bit difficult, add some water in which the beans have soaked

·        Put the flour with the yeast, cumin and salt in a bowl and knead into a mass

·        Add the bean mixture to the flour mixture. Then add the spinach and some water. Mix into a ball of dough

·        The dough should not be too stiff but not too wet either. Otherwise, add a little water.

·        Leave the dough to rise for 2-3 hours

·        Preheat your deep fryer to 150°C

·        Take a ball of dough in a damp palm. Press the dough flat and make a hole in the middle

·        Slip the bara into the oil, fry until golden brown and then drain on kitchen paper

Tips

·        Serve hot with a chutney
