fresh cucumber soup with avocado

1.5 cucumber without peel and seeds
1 ripe avocado
50 gr smoked salmon
5 gr mint
2 tablespoons extra virgin olive oil
4 teaspoons white yoghurt
Pepper and salt
1 clove of garlic


Preparation time: 10 min.
Remove the peel from the cucumber
Cut the cucumber and avocado into pieces
Add them together with the mint and garlic in the blender
Blend into a nice smooth soup
Gradually add the olive oil and continue to blend
Slice the smoked salmon into strips
Put a little soup in each glass
Add a teaspoon of yoghurt and some strips of smoked salmon
Finish with a mint leaf and pepper and salt.


Serve with homemade breadsticks
