Cold cucumber soup with mint or coriander

4 servings


FRITEL Blender BL 3890


500 ml cold vegetable bouillon
1 cucumber without peel and seeds
Half a bunch of mint or coriander
Pepper and salt
If necessary, a dash of lemon juice


Cut the cucumber into pieces and add to the blender along with the freshly chopped coriander, the vegetable bouillon and salt and pepper
Blend the mixture until smooth and season with salt and/or lemon juice if necessary
Place the soup in the refrigerator for at least 1 hour 
Finish with a few mint or coriander leaves


Serve with homemade bread sticks
