Cucumber soup with coconut

Ingredients

2 cucumbers without peel and seeds
2 spring onions
2 sprigs of mint
2 tablespoons (greek) yoghurt
6 tablespoons coconut milk
1 lime
1 clove of garlic

Preparation

Remove the skin from the cucumber and cut into pieces.
Place cucumber in blender with spring onion, garlic, mint, yoghurt, coconut milk and lime juice
Blend into a smooth soup
Leave the soup in the fridge for at least one hour before serving

Tips

Finish off with freshly ground pepper and a few pieces of cucumber
