Ingredients

  • 250 gr self-rising flour (sieved)
  • 125 gr melted butter
  • 20 gr fresh yeast
  • 200 ml tepid milk (+/-30°)
  • 200 ml sparkling water (lukewarm = +/- 30°C)
  • 4 eggs
  • Pinch of salt

Preparation

Preparation time: 30 min
  1. Take the fresh yeast and dissolve it in some lukewarm milk.
  2. Put the flour in a mixing bowl and make a hole in the middle where you add the yeast mixture, the rest of the lukewarm milk and sparkling water. Beat this into a mixture.
  3. Add a pinch of salt and the egg yolks and beat. Then add the melted butter to the batter.
  4. Beat the egg white until stiff and carefully fold it into the batter. Leave the batter to rise for about half an hour to an hour under a damp towel in a warm place.
  5. Take your FRITEL Top Fill waffle Maker, set it to thermostat position 5 and let it warm up until you hear the sound signal.
  6. Pour the batter into the measuring cup. 
  7.  Fill the measuring spoon provided (WA 2224) all the way to the brim with the liquid mixture. 
  8. Pour it at the top into your waffle iron and leave to bake until you hear the sound signal.
  9. CAUTION: This batter does not keep long (a few hours max)! So prepare the batter, let it ferment and then bake the waffles. Do not put the batter in the fridge to be used afterwards!
  10. Store the wafers in a plastic box. Heat them up again for 3 minutes.
  11. You can also freeze them! Then reheat the waffles for 4 minutes.
  12. Always eat a Brussels waffle warm! Delicious!
