Ingredients
- 25g butter
- Vegetable oil
- 350g aspargus
- 3 shallots
- 2 cloves of garlic
- Spinach
- 700ml vegetable broth
- Olive oil
Preparation
- Preparation time: less than 30 minutes
- Remove the ends of the asparagus and chop them finely
- Put the shallots, asparagus, garlic, spinach and broth in the Soup Maker.
- Pour into soup bowls.
Tips
- Sprinkle with olive oil and serve with sourdough bread if desired
- Finishing tip: Keep your asparagus tips for finishing. Heat the butter and oil in a large pan.
- Cook the asparagus tips for a few minutes to soften them. Gently sprinkle the asparagus tips over the soup when it is ready.
- TIP: If the soup is too thick, add a little more hot water when it is ready and mix it again.
